Chocolate Banana Cup Cake in the microwave yummy


We all know that craving, the unbelievable need for sweet stuff, specially when nearing that dratted time in the month.  I had a banana that was very ripe and I wanted chocolate... double impact right!

So I got this one from this site

I did change it up just a tiny bit but that is just me :) 

Oh and that book of hers is very tempting, I may just have to get it!!!

So here goes

1 ripe banana
1 egg
1/4 Cup Almond Butter
2 Tbsp cocoa dark unsweetened
4 drops Stevia French Vanilla or other of liking
Up to 1/4 cup of mixed chocolate chips and nuts  (I used probably half of that)
(perhaps even a dash of coconut might be delish)

Mash the banana in a bowl, add the almond butter and egg and mix together until smooth.
Add the cocoa and mix well and then the stevia, you may just want to taste to make prefect.
At last add the mix and note I think I used like half of that and it was totally awesome,
I used 56% dark chocolate and only two strips of it so about 20 gr chopped up but not too fine
Hazelnuts, I used about 12 and chopped them up fine

This I divided into two microwave dishes them crème brulé ones... lol
I put plastic film over one and in the fridge for tomorrow...  hehehehe

Into the microwave goes the one that I was going to have and I nuked it for 2.25
It could be from 1.5 - 2.5 minutes, you just need to check.

It should be away from the rim and firmish on top...

AND OH MY GOD
it tasted LOVELY

For those who can handle dairy, then vanilla ice cream or whipped cream on top!

Porridge from Coconut flour

Well as I am still on soft foods and mashed foods I wanted something I love for lunch today.
Of course this can be made as breakfast or part of dinner, it is delicious.

Also cause I have added eggs back into my diet without having problems this is a good porridge for me.


The original of this is from a Norwegian food blog
But I changed it up just a bit due to me NOT being able to do that much dairy.

2 eggs
1 dl Almond milk or Coconut
1 tablespoon coconut flour
1/4 teaspoon vanilla  (or to taste)
1/2 teaspoon cinnamon (or to taste)
4 drops Stevia (I used Via Health)
1 teaspon coconut oil

All whipped together in a pot and don't worry about the coconut oil being solid it will melt.
Stir constantly while cooking over low heat.


1/2 cup fresh or frozen raspberry as topping (if frozen then warm them up a bit)

When desired thickness is reached, put on plate and add berries on top.

If you like add almond milk :)

Mashed and shredded food :)

Am home after operation and have to mash and shred all the food I eat for the time being or chew it endlessly.  This is so there is not to much stress on the diaphragm and the stomach itself.

This can be either Dinner or lunch, was to be my lunch but ended up as dinner and will be lunch tomorrow as I will only eat half of what is on the plate.

Can not eat too warm food or drinks so this is more or less coldish... but holy cow it tastes delish!!!


So for this what is needed is

Broccoli
Cauliflower
Carrots

These are boiled or steamed if you can.

I used a food processor to shred the broccoli and carrots together
And  then the cauliflower

I did this while they were warm as I knew they would cool while I was fiddling with the fish.

Good piece of Cod or Haddock, steamed.
in the processor with 2 heaped teaspoons of Green Pesto
3 - 4 tablespoons Caesar sauce from Walden Farms

Put on plate and sprinkle some Maldon salt on top.

I put some ketchup on top just for the fun of it.

If it feels dry then add more sauce either on top on plate or in the processor.

This tastes absolutely YUMMMY and to have warm just stick in the oven or microwave...

Raw veggies as snack

Again will add a picture later :)

We all love different types of veggies. As I don´t use much night shade veggies do to high starch and just not working so well with my Fibro... 

So I choose something else.

Cauliflower, 
broccoli, 
celery, 
cucumbers, 
mushrooms,
orange peppers.

I cut these down into nice finger bits and for dip I choose various sauce´s from Walden Farm.
I am specially hooked on the Bacon ranch one, oh my god it is so good and NO sugar... love it.

This works perfectly when sitting and watching a movie
I don´t snack after 8 pm apart from the odd day as well anything after that time is more prone to jump on my hips... roflmao

Protein Shake w/avocado and berries

Will add a picture at some point.... 

As you know I have been having morning shakes or smoothies if you like.

I don´t have much time to make good breakfast as I live out of the city and time is luxury.
So for the past well over 2 months I have had my shake and felt totally great.

Side affects are weight loss, sad yeah, LOVE IT

So as I am totally hooked on my breakfast I will in future put up more types of shakes as I try them

Don´t have a name for this one so we will just call it

Berry-Green

6-8 frozen Black berries or other berries of choice
250-300 ml of almond or coconut milk (I am hooked on almond)
1 scoop of Protein (I use Pea protein from NOW)
1/2  avocado in cubes
1 very full tsp of almond butter (I am using one from Rapunzel)
3 drops of Vanilla Stevia (I love French Vanilla from NOW)

Mix an enjoy!

Ahhhh Eggs, yes I have added eggs back in :)

Well I know I have been without the 7 foods for a long time but I decided I needed eggs the most and thought ok that will be the first thing I will test.

So far so good, don´t seem to have problems with them.

Though at the moment my stomach is nuts but that has to do with something else than food, hopefully it will be settled before my big operation in 10 days. :)

So after testing egg with the simple fried egg in coconut oil and so forth, today I baked me bread, well I decided to do it in muffins style. Is supposed to be the other way but who cares, my bread, my choice...

This is how it looks!!!  And am having Almond butter on top... yummmy  oh and I like to put few flakes of Maldon salt on top :)  ohhh gooooood this is soooooooooooo good!



I don´t remember where I got the recipe but I will find out and add a link here when I do. I have also seen it in other places either the same or some variations :)

5 eggs
50 gr coconut fat (if you are fine with dairy then use butter)
1 dl  coconut flour
1 msk Fiber (Husk)
1 tsp Baking powder (Wijnsteenzuur Bakpoeder from Naturfood)
1/2 tsp Salt (Maldon or similar sea salt)
Seeds of choice (I like to use 1-2 tsp of Kumen)

Eggs mixed until light and fluffy.
Dry materials mixed together and then added to the eggs.
Coconut fat melted and cooled and added to the mix.

I used 6 muffin form and heaped them a little.
Can also be done in normal small form and sliced.

Oven heated up to 175 Celcius and baked for 25 minutes, a bit less in the muffin forms.

Cooled and enjoyed with anything you like as topping.

Didn't feel like cooking and had lunch at a restaurant so felt more like just a shake for dinner and Chia Pudding. Just waiting for it to be ready to taste and fingers crossed it is delish.

Will post the whole experience :)

Holy moly ohhh yes... delish for sure!!!

I used

1/2 cup coconut milk and I think almond milk would work awesome too
2 tbsp chia seeds  I am going to do 2 1/2 tbsp next time for a bit more thickness.
3 drops French Vanilla Stevia from NOW for the vanilla taste and the sweetness
1 tsp cocoa  this may vary so I suggest you stir in 1/2 tsp and taste and add more as you go.

Everything put in a bowl and whisked together. Into the fridge for 20-30 minutes.... and voilà
I think raspberries would be awesome with this as a treat :)

I am actually going to make myself one in a jar to take with me to work tomorrow as got some cold chicken and salad with some ginger so think it will be the perfect lunch :) Going to add frozen raspberries and just leave it in the fridge... yummm 

If you want more vanilla taste then use vanilla extract ca. 1 tsb and then just 1-2 drops of normal stevia.

Lazy thoughts Frying fish on a pan

Well we all know those days when we are too tired, in too much hurry or just simply having a nice fat lazy spell. Well I got the last one big time.

So instead of lot of stuff on my plate for dinner... it was JUST fish... fried in a pan.
Now you may go woa what does she mean fried in a pan. Fried foods are bad for drama Queens....

Well, this method seems to be working quite well.
I clean and slice the fish into small portions and then put 50/50 coconut flour and flax seed meal on a plate and have it cover the fish just like if you were putting bread crumbs on. But no egg just clean it with cold water and the wet is enough to cover it. Then on the pan and I cook with coconut oil. Good oil for the body so am not measuring it up too much, just add if I feel the need for more.

This tastes yummy, the coconut and flax seed are quite tasty on the outside and then sprinkle some sea salt on top and bingo...

For a more posh, I would do tomatoes, salad and perhaps one of Waldens Farm sauce... they got one that has bacon flavour and is yummylicious.

Been meaning to start on this for some time now, sorry for the wait :)

This blog is basically about my personal progress to a better life through food!

Yes life and food or food and life.

For me, eating correct means feeling less pain!

I have a very delicate stomach that I call drama Queen.
I get punished for every small mistake I make, the drama Queen makes sure of it.

So the title of the blog basically says it all.
This will be food from this or that style and will probably fit within any of the styles mentioned in the blog name.

I am not fanatic and this is not something religious.
Nope... this is about me, myself and I.

You might like to try some of it and you might not.
